I have to admit St. Patrick’s Day is a little lower on our list of holidays to celebrate. Even though we are of Dutch-Irish decent. My children are very random sometimes and they will just bring things up out of the blue. Keep in mind that my children are not 7 and 4 years old, they are 16 and 13. They came to me over the weekend and explained that since St. Patrick’s Day was coming up they needed a special treat. While trying to think of something I had on hand and relatively simple…..I came up with this quick treat for my Leprechauns.
This really was a simple treat to put together on such short notice.
I used a name brand cookie mix. We chose chocolate chip walnut.
Since we really like both the black walnuts (from out backyard trees) and chocolate chips, I added a few extra to the recipe.
Scooped them out in to 1 – 1 1/2″ balls and baked them according to package directions.
Now the fun part. I mixed up some buttercream frosting and added some peppermint flavoring and green food coloring.
Here is what we have after mixing and we are ready for assembly. Place a tablespoon (or more if you really have a real sweet tooth) of frosting on a cooled cooked and sandwich together. Nothing to it.
Add a few sprinkles and you have an easy St. Patrick’s Day treat on the fly.
