When the days are long and time is short an easy healthy one pan dish may be the answer. If your family is like mine you don’t have the time or the luxury to spend in the kitchen preparing meals.
You know the routine…it’s hurry home from work, drop off and pick up from this practice, or attend this committee meeting. After all of this is done there is little or not time for cooking. I have found a great remedy for this all so familiar problem….One Pan Lemon Chicken
The weeknight time saver!
While doing my research to find that one pan meal, I came across this great recipe for One Pan Lemon Chicken Leg Quarters with Potatoes. This recipe comes via Pinterst from Kacey, The Cookie Writer . It is so easy you can make it as is or put your on twist on it based on your families preferences.
Some of the ingredients could be made ahead to save a little time in prep such as the sauce. You could create this sauce the night before or the morning of and refrigerate. Once the sauce is ready to use mix well and pour over your chicken and potatoes. The lemon sauce is a wonderful complement to the chicken and potatoes and gives that extra zing. Potatoes with skins on not only gives this dish visual appeal, but will add great texture.
Ingredients
- 1.5 lbs Potatoes (My family loves red skinned potatoes, but you can use which potato your family enjoys)
- 3 lbs bone-in (skin-on) chicken leg quarters (or your favorite cut!)
- Sauce
- ½ cup freshly squeezed lemon juice
- 1 tbsp. lemon zest (I found the lemon juice was enough and gave just the right amount of flavor)
- Salt and pepper
- 1 tbsp. dried oregano (I used fresh from our herb garden)
- 1 tbsp. lemon thyme (This was addition that I made instead of the lemon zest)
- ¾ tsp. garlic powder
- ¼ cup chicken broth
- ⅛ cup olive oil
- 1 tsp. coarse mustard (optional)
Instructions
Preheat oven to 400F.
Slice potatoes in half, and again into quarters if the potatoes are fairly large. (smaller cubes worked well for me in the recipe)
Place half the potatoes into the bottom of the pan. Add the chicken on top. Add remaining potatoes. Season with salt, pepper, and additional oregano if desired
.
Sauce
Combine the lemon juice, zest, salt, pepper, oregano, lemon thyme, garlic powder, broth, olive oil, and mustard. Whisk well. Pour over chicken and potatoes.
Cook for 20 minutes, uncovered. Lower oven temperature to 375F and cook for another 20-25 minutes, or until chicken reaches 160F.
Remove from oven and move chicken to cutting board to rest. If potatoes are still a bit firm, add back into oven for another 10-15 minutes.
Since this lemon chicken dish only has two main ingredients and a few herbs and spices it will be a hit. The aroma from the lemon is intoxicating and will have your entire kitchen smelling like fresh squeezed lemons. Your family will thank you for the quick and easy lemon chicken dish. You however, will be grateful for how easy it was to create a dish that the whole family can enjoy.
