Spring brings us cool mornings which is a great time for a yummy easy baked oatmeal for breakfast. Oatmeal is a wonderfully versatile and inexpensive food, but it makes cool spring morning’s even better. The farmer’s markets and the road side fruit and vegetable stands are beginning to fill up with berry offerings. This will allow you the opportunity to play with different tastes to complement your warm and taste oatmeal breakfast.
It is getting that time of year when the days are getting shorter, night air is cooler, and the craving of warm things begins to start stirring.

They came to me over the weekend and explained that since St. Patrick’s Day was coming up they needed a special treat. While trying to think of something I had on hand and relatively simple…..I came up with this quick treat for my Leprechauns.
