Labor Day is upon us and time for end of summer cookouts, parades, and sweet treats. I have an easy homemade ice cream sandwich cookie treat that is sure to be a great hit for you family and friends.
Simple Cookie Ingredients
The only ingredients needed for this treat is your families favorite packaged cookie mix and ice cream. My family loves chocolate chip cookies and vanilla ice cream. Prepare the mix as directed on package. Turn the dough out onto a baking sheet and spread evenly. While the cookie is baking it is time to work with your ice cream.
The ice cream will need to be soft and slightly melted. This will allow you to pour and spread the ice cream in a baking dish. (Keep in mind you don’t want the ice cream to be completely melted like a liquid mixture.) Return ice cream to the freezer to harden.
(I lined the baking dish with wax paper, but this is not necessary to do for this process)
When the cookie has cooled enough to work with you can use a biscuit cutter or your favorite cookie cutter to cut your tops and bottoms out. Making sure you have the same amount of tops as you do bottoms Remove the ice cream from the freezer and allow to soften slightly. You will only want it soft enough for your cutter to go through it.
Cookie Assembly Time
Place the cookie bottoms on a sheet pan with the smooth side up. Place the cut out ice cream on the bottom portion of the cookie place the top on with slight pressure. By applying a slight pressure will allow the ice cream to combine with the cookie. When the assembly is complete place sandwich cookie back into the freezer to harden. Before going back into the freezer you can roll the sandwich in sprinkles, cookie crumbs, chocolate chips, or what ever fun addition your family would like. Prior to placing into the freezer you can wrap in plastic wrap for easy handling. This process should only take approximately 20-25 minutes. This may vary based on your freezer temperature settings.
There will be leftover cookie pieces and ice cream. Don’t toss those wonderful bits out, use them for a second treat for the family. Crumble the pieces into smaller bites and set aside. Allow the leftover ice cream to soften and place into a bowl. Again, you will only want the ice cream soft and not liquid. When the ice cream has softened stir in the crumb bits. Place mixture into a freezer safe container and back into the freezer.
Now you have a sweet treat that your family can enjoy for another day or occasion.
